Creamy Tortellini Soup Recipe

I love making soup for my family, especially during the colder months of the year. Soup is easy to make and warms me up. I especially like making soup in my slow cooker, which allows me to keep the soup warm all day from lunch to dinner. I recently saw a recipe for creamy slow cooker tortellini soup in my Facebook feed. I modified the recipe to suit the tastes of my family and came up with a creamy and delicious soup recipe that was a hit with the whole family!

Ingredients

  • 1 pound of pork sausage
  • 1 medium onion
  • 1 cup of diced carrots
  • 2 teaspoons of minced garlic
  • 1 tablespoon of Italian seasoning
  • 1 teaspoon of salt
  • 48 ounces of chicken broth
  • 1/4 cup of corn starch
  • 1/4 cup of water
  • 12 ounces of evaporated milk
  • 2 cups of whole milk
  • 38 ounces of cheese tortellini
  • 2 cups of baby spinach

Directions

  1. Brown the pork sausage.
  2. Drain the fat from the browned sausage.
  3. Dice the onion.
  4. Dissolve the corn starch in the water.
  5. Combine the sausage, diced onion, diced carrots, minced garlic, Italian seasoning, and salt in a slow cooker.
  6. Pour in the dissolved corn starch, evaporated milk, and milk.
  7. Stir in the cheese tortellini and baby spinach.
  8. Heat the soup until ready to serve. If the soup becomes too thick, add some additional milk.
  9. Serve the creamy tortellini soup hot.
  10. Refrigerate any uneaten creamy tortellini soup.
