Green Onion Mashed Potatoes Recipe

Directions

  1. Wash the potatoes. Do not peel.
  2. Wash and slice the green onions into small pieces.
  3. Place the potatoes and green onions pieces in a pan of water.
  4. Boil the potatoes and green onions over medium-low heat until most of the water boils off.
  5. Drain the remaining water from the potatoes and green onions.
  6. Combine the butter, Greek yogurt, and salt in a medium bowl.
  7. Add the drained potatoes and green onions to the bowl.
  8. Mash the mixture until creamy.
  9. Serve hot.
  10. Refrigerate any uneaten green onion mashed potatoes.
