Slow Cooker French Onion Soup Recipe

Tastes change from childhood to adulthood. I have vivid and painful memories of my parents forcing me and my brother to eat French onion soup as kids. I hated the soup that my mother made (sorry, Mom!). Now that I am all grownup, I have come to love the savory soup. A few weeks ago, I saw a recipe for slow cooker French onion soup in my Facebook feed. I love making soup for my family, especially during the colder months of the year. I also love using my slow cooker because I can put all the ingredients together and go about my day while the soup cooks. My most recent creation was a delicious batch of French onion soup that I modified from the original recipe.

Ingredients

  • 3 large white onions
  • 4 tablespoons of butter
  • 2 tablespoons of brown sugar
  • 64 ounces of low sodium beef broth
  • 2 tablespoons of Worcestershire sauce
  • 1 teaspoon of minced garlic
  • 1/3 cup of cooking sherry
  • 4 sprigs fresh thyme
  • 1 bay leaf
  • 3/4 cup of shredded Gruyere cheese
  • 1/2 cup of shredded Emmental cheese
  • 6 tablespoons of shredded parmesan cheese

Directions

  1. Slice the onions.
  2. Combine the sliced onions, butter, and brown sugar in a non-stick pan.
  3. Cook the mixture over medium heat for about 20 minutes until the onions are browned and caramelized.
  4. Transfer the caramelized onions to a slow cooker.
  5. Add the beef broth, Worcestershire sauce, minced garlic, cooking sherry, thyme, and bay leaf to the slow cooker.
  6. Stir.
  7. Cook the soup until hot.
  8. Remove the thyme springs and bay leaf.
  9. Serve the French onion soup hot with the shredded cheese on top. (The soup also pairs well with French bread.)
  10. Refrigerate any uneaten slow cooker French onion soup.
