Sweet Autumn Chicken Recipe


  • 4 4 ounce boneless chicken breasts
  • 1 large butternut squash
  • 4 apples
  • 1 cup of apple cider
  • 2 tablespoons of butter
  • salt
  • pepper


  1. Preheat the oven to 450°.
  2. Peel the butternut squash and remove the innards.
  3. Chop the squash and apples into bite-sized cubes.
  4. Microwave the squash cubes for about 10 minutes or until slightly softened.
  5. Make a glaze by reducing the apple cider in a saucepan over high heat for about 10 minutes.
  6. Remove the reduced apple cider from the heat. Whisk in the butter and salt and pepper to taste.
  7. Place the chicken breasts in an oven-safe baking dish.
  8. Toss the squash and apple cubes on top of the chicken.
  9. Pour half of the glaze over the sweet autumn chicken.
  10. Bake uncovered for 15 to 20 minutes or until the chicken is thoroughly cooked.
  11. Drizzle with the remaining glaze.
  12. Serve hot.
  13. Refrigerate any uneaten sweet autumn chicken.
