Ingredients
- 4 4 ounce boneless chicken breasts
- 1 large butternut squash
- 4 apples
- 1 cup of apple cider
- 2 tablespoons of butter
- salt
- pepper
Directions
- Preheat the oven to 450°.
- Peel the butternut squash and remove the innards.
- Chop the squash and apples into bite-sized cubes.
- Microwave the squash cubes for about 10 minutes or until slightly softened.
- Make a glaze by reducing the apple cider in a saucepan over high heat for about 10 minutes.
- Remove the reduced apple cider from the heat. Whisk in the butter and salt and pepper to taste.
- Place the chicken breasts in an oven-safe baking dish.
- Toss the squash and apple cubes on top of the chicken.
- Pour half of the glaze over the sweet autumn chicken.
- Bake uncovered for 15 to 20 minutes or until the chicken is thoroughly cooked.
- Drizzle with the remaining glaze.
- Serve hot.
- Refrigerate any uneaten sweet autumn chicken.
