Make Your Own Chipotle Rice Bowl: Frugal Friday

I love getting a rice bowl at Chipotle. However, eating out all the time starts to get expensive. So, when I was recently craving a rice bowl, I decided to make my own using ingredients that I already had at home.

The best part of a Chipotle rice bowl is the cilantro lime rice. Since I already had package of Uncle Ben’s Ready Rice Natural Whole Grain Brown Rice in my cupboard, I decided to make my own cilantro lime rice. Following the instructions on the package of rice, I opened the bag a few inches. I then added some lime juice and some cilantro to the bag and mixed the rice up by squeezing the contents around. I then microwaved the rice as usual. Voila! Homemade cilantro lime rice using ingredients that I already had sitting around my house.

After making my own cilantro lime rice, I added other yummy ingredients to my rice bowl using food that I already had at home. First I added some black beans, which I always stock in my cupboard. I then added some corn salsa that I had in the fridge. If I had not had corn salsa, I would have just opened a can of tomatoes and a can of corn. Finally, I topped my rice bowl with some avocado that I had in the fridge after making my daughter some more avocado baby food and then added a dollop of sour cream that I also had in the fridge. For my husband, I also added some hot sauce to his rice bowl.
