Apple Cider Cake Mix Cookies Recipe

I absolutely love the simplicity of bookies made with boxed cake mix. During the holiday season, I bake dozens and dozens of cake mix cookies. While prepping for an upcoming Halloween party, I picked up a box of limited edition apple cider cupcake mix from Betty Crocker. The resulting cookies were lightly sweet and tasted just like fall.

Ingredients

Directions

  1. Preheat the oven to 375°.
  2. Combine the powdered sugar and corn starch in a small bowl.
  3. Beat together the softened butter, eggs, and milk in a large bowl.
  4. Slowly add the cake mix to the butter mixture. Combine thoroughly.
  5. Slowly add the whole wheat flour. Combine thoroughly.
  6. Drop teaspoons of the cookie dough into the powdered sugar mixture.
  7. Roll the dough ball in the powdered sugar until thoroughly covered.
  8. Form the powdered sugar-covered dough into a ball.
  9. Place the powdered sugar-covered dough ball on a parchment paper-lined cookie sheet. Leave 2 inches between the dough balls.
  10. Bake the cookies for 9 minutes or until the bottoms begin to brown.
  11. Allow the baked cookies to cool thoroughly.
  12. Ice the cookies with the apple cider frosting from the kit.
  13. Store the apple cider cake mix cookies in an airtight container.
