Coconut Macaroon Blossom Cookies Recipe

I absolutely love baking cookies for the holidays! Some of my favorite recipes are blossom cookies including my peanut butter Kiss cookies and butter pecan blossom cookies. I am also a huge fan of coconut macaroons. During my holiday baking a few years ago, I made some delicious coconut macaroon blossoms with the help of my daughter. Everyone in my family loved the recipe so much that I ended up making a second batch before Christmas! Now I make my coconut macaroon blossoms every December.

Among the festive treats that hold a special place in my heart are coconut and chocolate Kiss cookies. These delightful morsels, adorned with a Hershey’s Kiss in the center, are not only a joy to bake but also a symbol of the season for us. Each year, my family eagerly anticipates the moment when these delectable cookies emerge from the oven, their golden edges perfectly complementing the gooey chocolate center. As we savor these sweet creations, we share moments of baking and indulging together, creating memories that make the holiday season truly magical.

Ingredients

  • 2/3 cup of all-purpose flour (83 grams)
  • 14 ounces of shredded coconut
  • 1/2 teaspoon of salt
  • 14 ounces of sweetened condensed milk
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of almond extract
  • 60 chocolate Kisses

Directions

  1. Preheat the oven to 350°.
  2. Line baking sheets with parchment paper.
  3. Combine the flour, coconut, and salt in a medium mixing bowl. Stir thoroughly.
  4. Add the sweetened condensed milk, vanilla extract, and almond extract to the coconut mixture. Stir thoroughly.
  5. Drop tablespoon balls onto the parchment-lined baking sheet. The cookies do not spread so place the balls fairly close together. Pat down any stray coconut shreds to prevent burning.
  6. Bake for 8 minutes or until the bottoms turn slightly golden.
  7. Immediately press a chocolate Kiss into the center of each macaroon.
  8. Allow the cookies to cool thoroughly.
  9. Store the cooled coconut macaroon blossom cookies in an airtight container.
