I absolutely love baking cookies for the holidays! Some of my favorite recipes are blossom cookies including my peanut butter Kiss cookies and butter pecan blossom cookies. I am also a huge fan of coconut macaroons. During my holiday baking this year, I made some delicious coconut macaroon blossoms with the help of my daughter. Everyone in my family loved the recipe so much that I ended up making a second batch before Christmas!
Ingredients
- 2/3 cup of all-purpose flour
- 14 ounces of shredded coconut
- 1/2 teaspoon of salt
- 14 ounces of sweetened condensed milk
- 2 teaspoons of vanilla extract
- 1 teaspoon of almond extract
- 60 chocolate Kisses
Directions
- Preheat the oven to 350°.
- Line baking sheets with parchment paper.
- Combine the flour, coconut, and salt in a medium mixing bowl. Stir thoroughly.
- Add the sweetened condensed milk, vanilla extract, and almond extract to the coconut mixture. Stir thoroughly.
- Drop tablespoon balls onto the parchment-lined baking sheet. The cookies do not spread so place the balls fairly close together. Pat down any stray coconut shreds to prevent burning.
- Bake for 8 minutes or until the bottoms turn slightly golden.
- Immediately press a chocolate Kiss into the center of each macaroon.
- Allow the cookies to cool thoroughly.
- Store the cooled coconut macaroon blossom cookies in an airtight container.
