This holiday season, I created a gluten-free jelly sandwich cookie recipe using my favorite thumbprint cookie recipe as the base.

Ingredients

  • 1/2 cup of packed brown sugar (104 grams)
  • 1 cup of butter (230 grams)
  • 2 egg yolks (38 grams)
  • 1 teaspoon of vanilla (6 grams)
  • 3 cups of gluten-free all-purpose flour (360 grams) (or all-purpose flour)
  • 1/2 teaspoon of salt (13 grams)
  • jelly or jam

Directions

  1. Preheat the oven to 350°.
  2. Soften the butter.
  3. Combine the brown sugar, butter, egg yolk, and vanilla in a large bowl with a mixer.
  4. Add the salt and flour to the wet ingredients.
  5. Scoop the cookie dough into 1-inch balls.
  6. Divide the balls in half.
  7. Roll the balls into circles and flatten.
  8. Place the unbaked cookies on a cookie sheet.
  9. Bake for 8 minutes or until golden.
  10. Allow the baked cookies to cool slightly.
  11. Scoop 1 teaspoon of jam or jelly onto one cookie.
  12. Press another cookie on top of the jelly or jam. Store the cookies in an airtight container or freeze.
