Gluten-Free Jelly Sandwich Cookies Recipes

I love baking cookies during the holiday season. Sandwich cookies, a delightful marriage of two perfectly baked discs hugging a luscious filling, epitomize the joy of sweet indulgence. These delectable treats come in a myriad of flavors. The symphony of textures and flavors creates a sensory delight with every bite. Whether dunked in milk for a nostalgic experience or savored alone, sandwich cookies effortlessly balance sweetness and satisfaction. Portable, versatile, and universally adored, these miniature marvels continue to enchant taste buds and spark moments of bliss.

Gluten-free cookies have revolutionized the baking landscape, catering to diverse dietary needs without compromising on taste and texture. Crafting these treats involves substituting traditional wheat flour with alternatives. The challenge lies in achieving the perfect balance — ensuring a tender, crumbly bite while steering clear of the denseness often associated with gluten-free baking. With an expanding array of gluten-free ingredients and innovative recipes, baking has become an inclusive art. Gluten-free cookies have elevated the joy of indulgence for those with dietary restrictions, proving that delectable treats need not discriminate. This holiday season, I created a gluten-free jelly sandwich cookie recipe using my favorite thumbprint cookie recipe as the base.

  • jelly or jam

  1. Preheat the oven to 350°.
  2. Soften the butter.
  3. Combine the brown sugar, butter, egg yolk, and vanilla in a large bowl with a mixer.
  4. Add the salt and flour to the wet ingredients.
  5. Scoop the cookie dough into 1-inch balls.
  6. Divide the balls in half.
  7. Roll the balls into circles and flatten.
  8. Place the unbaked cookies on a cookie sheet.
  9. Bake for 8 minutes or until golden.
  10. Allow the baked cookies to cool slightly.
