I grow tomatoes in my garden almost every year. By the end of August, I always seem to have more tomatoes than my family and I can eat raw. Because my kids love tomato soup, I decided to try my hand at making my own version with my homegrown tomatoes. I also used some onions that my mom had grown in her garden.
Ingredients
- 2 cups of cherry tomatoes
- 1 cup of sliced white onions
- 12 ounces of evaporated milk
- 14.5 ounces of chicken broth
- 6 ounces of tomato paste
- 1 tablespoon of minced garlic
- olive oil
- salt
- black pepper
Directions
- Preheat the oven to 400°.
- Wash the cherry tomatoes.
- Peel and slice the onions.
- Toss the tomatoes and onion slices in olive oil until evenly coated.
- Spread the tomatoes and onions on a parchment-lined baking sheet.
- Sprinkle with salt and pepper.
- Bake for 30 minutes or until the tomatoes are slightly roasted. Stir occasionally.
- Allow the roasted tomatoes and onions to cool for about 10 minutes.
- Combine the tomatoes, onions, evaporated milk, chicken broth, and tomato paste in a blender.
- Blend until smooth.
- Roast the minced garlic in a large soup pan.
- Add the blended soup to the garlic. Salt and pepper to taste.
- Simmer for 30 minutes. Stir occasionally.
- Serve the roasted cherry tomato soup hot.
- Refrigerate any uneaten roasted cherry tomato soup.
