    Rosemary and Olive Oil Soda Bread Recipe

    I love the flavor and texture of fresh bread. I sometimes use my bread machine to bake fresh loaves, but I also love the simplicity of soda bread. Soda bread is bread leavened with baking soda instead of the traditional yeast. I have a delicious Irish soda bread recipe that I make for St. Patrick’s Day. I also recently baked some rosemary and olive oil soda bread that paired perfectly with chili.

    Ingredients

    • 4 cups of unsifted flour
    • 1/4 cup of white sugar
    • 1 teaspoon of baking soda
    • 1 tablespoon of baking powder
    • 1/2 teaspoon of salt
    • 1/2 cup of butter
    • 1 1/2 cups of buttermilk
    • 3 tablespoons of real mayonnaise
    • 3 tablespoons of dried rosemary
    • olive oil

    Directions

    1. Preheat the oven to 375°.
    2. Combine the flour, sugar, baking soda, baking powder, and salt in a large mixing bowl
    3. Cut the butter into the dry ingredients until the mixture resembles coarse meal.
    4. Add the buttermilk, mayonnaise, and rosemary to the mixture. Stir until blended.
    5. Knead the dough until smooth.
    6. Shape the dough into two round loaves.
    7. Place the loaves on a greased baking sheet.
    8. Cut a cross into the top of each loaf.
    9. Bake for 30 minutes.
    10. Brush the tops of the loaves with olive oil.
    11. Bake for 15 minutes or until lightly browned.
    12. Allow the rosemary and olive oil soda bread to cool before cutting.
    13. Store the cooled rosemary and olive oil soda bread in an airtight container.
