Chewy Gingerbread Crinkle Cookies Recipe

I love gingerbread, but my husband does not. In addition to my classic rolled gingerbread cookies, this year I also came up with a new recipe. The drop cookies have a delicate spice flavor and taste even more delicious with a swirl of cream cheese icing on top.

Ingredients

  • 8 ounces of cream cheese
  • 1/2 cup of softened butter
  • 1 cup of white sugar
  • 1/2 cup of packed brown sugar
  • 1 tablespoon of molasses
  • 1 teaspoon of vanilla
  • 1/2 teaspoon of almond extract
  • 2 eggs
  • 2 1/3 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1/4 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 tablespoon of ginger
  • 2 teaspoons of cinnamon
  • 1/2 teaspoon of allspice
  • 1/2 teaspoon of nutmeg
  • 1 teaspoon of pumpkin pie spice
  • optional: cream cheese icing

Directions

  1. Preheat the over to 350°.
  2. Cream together the cream cheese, butter, white sugar, and brown sugar.
  3. Add the molasses, vanilla, almond extract, and eggs to the butter mixture.
  4. Combine thoroughly.
  5. Combine the flour, baking powder, baking soda, salt, ginger, cinnamon, allspice, nutmeg, and pumpkin pie spice in a separate bowl.
  6. Slowly add the dry ingredients to the wet ingredients.
  7. Use a 1-inch cookie scoop to drop scoops onto a parchment-lined baking sheet.
  8. Bake for 14 minutes. Do not overbake.
  9. Allow the cookies to cool thoroughly.
  10. Store the chewy gingerbread crinkle cookies in an airtight container.
  11. Frost the cooled cookies with optional cream cheese icing.
