I love gingerbread, but my husband does not. In addition to my classic rolled gingerbread cookies, this year I also came up with a new recipe. The drop cookies have a delicate spice flavor and taste even more delicious with a swirl of cream cheese icing on top.
Ingredients
- 8 ounces of cream cheese
- 1/2 cup of softened butter
- 1 cup of white sugar
- 1/2 cup of packed brown sugar
- 1 tablespoon of molasses
- 1 teaspoon of vanilla
- 1/2 teaspoon of almond extract
- 2 eggs
- 2 1/3 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1/4 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 tablespoon of ginger
- 2 teaspoons of cinnamon
- 1/2 teaspoon of allspice
- 1/2 teaspoon of nutmeg
- 1 teaspoon of pumpkin pie spice
- optional: cream cheese icing
Directions
- Preheat the over to 350°.
- Cream together the cream cheese, butter, white sugar, and brown sugar.
- Add the molasses, vanilla, almond extract, and eggs to the butter mixture.
- Combine thoroughly.
- Combine the flour, baking powder, baking soda, salt, ginger, cinnamon, allspice, nutmeg, and pumpkin pie spice in a separate bowl.
- Slowly add the dry ingredients to the wet ingredients.
- Use a 1-inch cookie scoop to drop scoops onto a parchment-lined baking sheet.
- Bake for 14 minutes. Do not overbake.
- Allow the cookies to cool thoroughly.
- Store the chewy gingerbread crinkle cookies in an airtight container.
- Frost the cooled cookies with optional cream cheese icing.
