I love baking cookies, especially for the holiday season. My dad loved oatmeal cookies, so I wanted to create an oatmeal-based cookie in his honor this year. Normally I would put raisins in my oatmeal cookies, but I wanted a more Christmasy flavor profile. I therefore used dried cranberries and white chocolate chips. I also used oat flour, which I make myself by milling oatmeal in my baby food processor. My daughter proclaimed the new recipe the best that she has ever tasted! You can even make a batch weeks before the holidays and freeze the cookies for eating later.
Ingredients
- 3/4 cups of butter
- 1 cup of brown sugar
- 1/4 cup white sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- 1 1/2 cups of oat flour
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- 1 teaspoon of salt
- 3 cups of oats
- 2 cups of diced dried cranberries
- 1 cup of white chocolate chips
Directions
- Preheat the oven to 350°.
- Cream together the butter, sugar, and brown sugar.
- Add the eggs and vanilla extract to the sugar mixture.
- Whisk together the oat flour, baking soda, cinnamon, nutmeg, and salt.
- Slowly add the dry ingredients to the wet ingredients.
- Slowly add the oats to the dough
- Add the diced dried cranberries to the dough
- Add the white chocolate chips to the dough.
- Place 1-inch balls of dough onto a parchment-lined baking sheet. The cookies spread out while cooking, so leave at least an inch between each ball.
- Bake the cookies for 10 to 12 minutes or until lightly browned.
- Allow the cookies to cool before removing from the baking sheet.
- Store the white chocolate cranberry oatmeal cookies in an airtight container.
