Chicken and Gnocchi Soup Recipe

With cold winter weather here, I love making hot soup recipes for my family. My kids and I are also fans of the inexpensive rotisserie chicken from Walmart and Sam’s Club. After my family eats, I usually have enough chicken left over to make soup the next day. This winter I have created delicious rotisserie chicken tortellini soup and chicken and tortellini soup recipes that my family love. My daughter also loves the gnocchi soup from Olive Garden. Thus, with my most recent rotisserie chicken and a package of potato gnocchi from the Dollar Tree, I made a delicious pot of chicken and gnocchi soup.

Ingredients

  • 2 cups of shredded rotisserie chicken
  • 2 cups of shredded carrots
  • 2 cups of chicken stock
  • 1 bottle of Blue Moon
  • 12 ounces of evaporated milk
  • 1/4 cup of corn starch
  • 1/4 cup of water
  • 1 cup of whole milk
  • 1 teaspoon of salt
  • 1 tablespoon of Italian seasoning
  • 1 teaspoon of minced garlic
  • 17.6 ounces of potato gnocchi

Directions

  1. Dissolve the corn starch in the water.
  2. Combine the shredded chicken, carrots, chicken stock, Blue Moon, evaporated milk, corn starch mixture, water, whole milk, salt, Italian seasoning, minced garlic, and potato gnocchi in slow cooker.
  3. Heat the soup until ready to serve. If the soup becomes too thick, add some additional milk.
  4. Serve the chicken and gnocchi soup hot.
  5. Refrigerate any uneaten chicken and gnocchi soup.
