When out with my kids for various school activities, meals become a little more difficult. Once or twice a week, I pick up an inexpensive rotisserie chicken from Walmart or Sam’s Club. After the three or four of us in my family eat, I usually have enough left over to make soup the next day. This winter I have created a delicious rotisserie chicken tortellini soup recipe that my family loves. When my daughter recently asked for chicken noodle soup, I decided to use up another chicken in my fridge by making a chicken and tortellini soup recipe instead. I also used the bones of the chicken to make my own chicken stock.
Ingredients
- 3 cups of shredded rotisserie chicken
- 19 ounces of cheese tortellini
- 15 ounce can of peas and diced carrots
- 1 bottle of Blue Moon
- 2 cups of water
- 6 sprigs of fresh thyme
- 1 teaspoon of salt
- 1 tablespoon of dried rosemary
- 2 cups of homemade chicken stock
Directions
- Remove the chicken from the bones.
- Place the remaining bones and skin in a large pot.
- Cover the bones and skin with water.
- Cook over medium heat for an hour or more to create a chicken stock.
- Drain the chicken solids from the stock.
- Combine the shredded chicken, tortellini, peas and carrots, Blue Moon, water, thyme sprigs, salt, rosemary, and chicken stock in slow cooker.
- Heat the soup until ready to serve. If the soup becomes too thick, add some additional water, chicken stock, or Blue Moon.
- Serve the chicken and tortellini soup hot.
- Refrigerate any uneaten chicken and tortellini soup.
