Last year I added a yummy cream cheese jam cookie to my list of favorite Christmas cookies. Making the cookies is a bit tricky and a little time consuming, but the end result is a light and delicious holiday treat. Just be sure to pinch the unbaked cookie dough together firmly, or the cookies pop open during baking.
Ingredients
- 2 sticks of butter
- 2 1/2 cups of whole wheat flour
- 8 ounces of cream cheese
- 1 jar of jam
Directions
- Soften the butter and cream cheese.
- Cream together the softened cream cheese and butter in a medium mixing bowl.
- Slowly fold in the flour.
- Wrap the cookie dough in plastic and refrigerate for 15 to 20 minutes.
- Preheat the oven to 375°.
- Cut the chilled dough into smaller sections.
- Roll each section between two layers of wax paper until slightly thinner than a pie crust. Keep the rest of the dough refrigerated.
- Peel away the top layer of wax paper.
- Use a round glass or cookie cutter to cut the dough into circles.
- Fill each circle with 1/4 teaspoon of jam.
- Fold the circles over the jam and pinch together firmly.
- Place the folded cookies onto an ungreased cookie sheet.
- Bake for 20 minutes or until lightly golden.
- Immediately remove the baked cookies from the cookie sheet and allow to cool.
- Store the cream cheese jam cookies in an airtight container.
