I love baking. I especially love baking cookies during the holidays. For the first time ever, I am hosting a Thanksgiving party in a few days for my homeschooling groups. In addition to baking, I also love tweaking my recipes. To accommodate the children in my groups with dairy allergies, I have modified my classic rolled sugar cookie recipe to use coconut oil instead of butter. I discovered two important tips while testing out my first two batches. First, unlike regular sugar cookie dough, do not refrigerate this dough because the coconut oil solidifies into hard clumps, resulting in unrollable dough. I also had to add extra water because simply swapping the butter for coconut oil resulted in dough that was too dry.
Ingredients
- 1 cup of white sugar
- 1 cup of coconut oil
- 1 teaspoon of vanilla extract
- 1/8 teaspoon of nutmeg
- 1/4 teaspoon of cinnamon
- 1 egg
- 2 1/3 cups of whole wheat flour
- 1/2 teaspoon of baking soda
- water
- colored sugar
Directions
- Mix together the coconut oil and sugar.
- Add the vanilla, nutmeg, cinnamon, and egg.
- In a separate bowl, stir together the flour and baking soda.
- Slowly add the dry mixture to the wet ingredients.
- Sprinkle water on the mixture until a dough ball forms. The dough should be not too wet but not too dry.
- Preheat the oven to 350°.
- Roll the sugar cookie dough in a fourth-inch sheet on a floured surface.
- Cut the dough using cookie cutters.
- Place the cookies on an ungreased or parchment-lined cookie sheet.
- Decorate the unbaked cookies with colored sugar.
- Bake for 8 to 12 minutes or until golden.
- Allow the cookies to cool slightly before removing from the cookie sheet.
- Allow the cookies to cool thoroughly.
- Store the dairy-free rolled sugar cookies in an airtight container.
