    No-Bake Crispy Peanut Butter Ball Recipe

    I love peanut butter, and I love chocolate. I especially love peanut butter and chocolate together. During the holidays I love to make all sorts of tasty treats. My family also loves peanut butter and chocolate. While going through my baking supplies, I discovered an unused bar of chocolate bark coating. I also have a surplus of peanut butter in my pantry and a few boxes of Rice Krispies. I decided to make some delicious no-bake chocolate-covered peanut butter balls with crispy rice. I even added some psyllium husk powder to add a little extra fiber to the treats.

    Ingredients

    • 16 ounces of creamy peanut butter
    • 1/4 cup of psyllium husk powder
    • 1/4 cup of powdered sugar
    • 2 1/2 cups of crisp rice cereal (Rice Krispies)
    • 1 pound of chocolate bark coating

    Directions

    1. Combine the peanut butter, psyllium husk powder, and powdered sugar in a mixing bowl.
    2. Fold in the crisp rice cereal.
    3. Use a cookie scoop to place 1-inch balls of peanut butter on a parchment-lined cookie sheet.
    4. Freeze the peanut butter balls.
    5. Melt the chocolate bark coating in a double boiler.
    6. Dip the frozen peanut butter balls in the chocolate coating.
    7. Place the coated peanut butter balls on a parchment-lined cookie sheet.
    8. Allow the chocolate coating to harden.
    9. Store the no-bake crispy peanut butter balls in an airtight container.
