Shepherd’s pie is a favorite meal in my house. While the classic recipe is delicious, I decided to change things up a bit recently. Instead of mashed potatoes, I used sweet potatoes for the top layer. The mix of sweet with savory was absolutely delicious!
Ingredients
- 2 pounds of sweet potatoes
- 1/2 cup of sour cream
- 2 tablespoons of butter
- 1/2 teaspoon of salt
- 1 cup of beef broth
- 2 teaspoons of corn starch
- 1.5 pounds of ground beef
- 1 cup of chopped carrots
- 1 medium onion, diced
- 2 tablespoons of minced garlic
- 2 tablespoons of tomato paste
- 1 teaspoon of rosemary
- 1 teaspoon of thyme
- 1 teaspoon of sage
- ½ teaspoon of black pepper
- 2 tablespoons of Worcestershire sauce
- 15 ounces of peas
Directions
- Preheat the oven to 425°.
- Peel, boil, and mash the sweet potatoes.
- Add the sour cream, butter, and 1/4 teaspoon of salt to the sweet potatoes and stir.
- Whisk together the beef broth and corn starch.
- Brown the ground beef in a large frying pan.
- Drain the cooked beef and return to the pan.
- Add the carrots, onion, and garlic to the cooked beef.
- Cook for 6 minutes, stirring occasionally.
- Add the tomato paste and herbs to the pan.
- Cook and stir for another minute.
- Add the broth mixture, Worcestershire sauce, 1/4 teaspoon of salt, and pepper to the pan.
- Cook and stir for 3 minutes.
- Spread the meat mixture in the bottom of a 9×13 baking dish.
- Spread the peas evening over the meat mixture.
- Spread the mashed sweet potatoes evenly on top of the shepherd’s pie.
- Bake for 30 minutes.
- Serve the sweet potato shepherd’s pie hot.
- Refrigerate any uneaten sweet potato shepherd’s pie.
