Sweet Potato Shepherd's Pie Recipe

Shepherd’s pie is a favorite meal in my house. While the classic recipe is delicious, I decided to change things up a bit recently. Instead of mashed potatoes, I used sweet potatoes for the top layer. The mix of sweet with savory was absolutely delicious!

Ingredients

  • 2 pounds of sweet potatoes
  • 1/2 cup of sour cream
  • 2 tablespoons of butter
  • 1/2 teaspoon of salt
  • 1 cup of beef broth
  • 2 teaspoons of corn starch
  • 1.5 pounds of ground beef
  • 1 cup of chopped carrots
  • 1 medium onion, diced
  • 2 tablespoons of minced garlic
  • 2 tablespoons of tomato paste
  • 1 teaspoon of rosemary
  • 1 teaspoon of thyme
  • 1 teaspoon of sage
  • ½ teaspoon of black pepper
  • 2 tablespoons of Worcestershire sauce
  • 15 ounces of peas

Directions

  1. Preheat the oven to 425°.
  2. Peel, boil, and mash the sweet potatoes.
  3. Add the sour cream, butter, and 1/4 teaspoon of salt to the sweet potatoes and stir.
  4. Whisk together the beef broth and corn starch.
  5. Brown the ground beef in a large frying pan.
  6. Drain the cooked beef and return to the pan.
  7. Add the carrots, onion, and garlic to the cooked beef.
  8. Cook for 6 minutes, stirring occasionally.
  9. Add the tomato paste and herbs to the pan.
  10. Cook and stir for another minute.
  11. Add the broth mixture, Worcestershire sauce, 1/4 teaspoon of salt, and pepper to the pan.
  12. Cook and stir for 3 minutes.
  13. Spread the meat mixture in the bottom of a 9×13 baking dish.
  14. Spread the peas evening over the meat mixture.
  15. Spread the mashed sweet potatoes evenly on top of the shepherd’s pie.
  16. Bake for 30 minutes.
  17. Serve the sweet potato shepherd’s pie hot.
  18. Refrigerate any uneaten sweet potato shepherd’s pie.
