Homemade bread fresh out of the oven always smells and tastes delicious. During the holiday season, I always make a couple loaves of the brown bread that my family loves to have with Christmas dinner. I also make the recipe throughout the year whenever I want fresh bread.
Ingredients
- 2 1/3 cups water
- 2 cups of oats
- 1/2 cup of butter, cubed
- 1/3 cup of molasses
- 3 plus 2 to 3 cups of white whole wheat flour or whole wheat flour
- 5 teaspoons of active dry yeast
- 2 teaspoons of salt
Directions
- Bring the water to boiling.
- Pour the boiling water over the oats.
- Add the butter and molasses to the oats.
- Stir.
- Allow the oat mixture to cool to 120°. Stir occasionally.
- Combine 3 cups of the flour, active dry yeast, and salt in a separate bowl.
- Add the dry ingredients to the wet ingredients.
- Add the remaining flour to mixture until a soft dough forms.
- Kneed the dough on a floured surface for 6 to 8 minutes or until smooth and elastic.
- Form the dough into a ball.
- Place the dough in a greased bowl, turning the ball over once to grease the top.
- Cover the dough.
- Allow the dough to rise in warm place for an hour or until doubled in size.
- Punch the dough down.
- Divide the dough in half.
- Shape the dough into loaves and place in two greased 9×5 bread pans.
- Cover the dough.
- Allow the dough to rise in warm place for half an hour or until doubled in size.
- Preheat the oven to 375°
- Bake the bread for 35 to 40 minutes or until lightly browned.
Optional Add-ins
Add in 3 tablespoons of Italian seasoning for an Italian herb bread.
