I associate cinnamon with the Christmas holiday. I also love watching and reading The Grinch with my kiddos. I have previously made vanilla-flavored Grinch cookies. I also make a sinfully cinnamon cookie. This year I decided to create a new Grinch cookie recipe with a cinnamon flavor. The outside is perfectly crisp while the inside is slightly chewy with a light vanilla-cinnamon taste.
Ingredients
- 1 of cup white sugar, plus extra
- 1⁄2 cup of butter
- 1 large egg
- 1 teaspoon of vanilla
- 1/2 teaspoon of green food coloring
- 1 1⁄2 cups of all-purpose flour
- 2 teaspoons of cinnamon
- 1 teaspoon of baking powder
- 1⁄4 teaspoon of salt
- cinnamon heart candies
Directions
- Preheat the oven to 350°.
- Cream together the sugar and butter.
- Add the egg, vanilla, and green food coloring to the butter mixture. Mix thoroughly.
- Combine the flour, cinnamon, baking powder, and salt.
- Slowly add the dry ingredients to the wet ingredients.
- Shape the cookie dough into 1-inch balls.
- Roll the cookie dough balls in the extra sugar.
- Place the sugared cookie dough balls on a parchment-lined cookie sheet.
- Bake for 8 to 10 minutes.
- Remove from the oven.
- Immediately press a cinnamon heart candy onto each cookie.
- Allow the cookies to cool slightly before removing from the cookie sheet.
- Store the cinnamon Grinch cookies in an airtight container.
