Italian Parmesan Zucchini Fries Recipe


  • Italian Parmesan Zucchini Fries1 small zucchini
  • 1 slice of whole wheat bread
  • 1/3 cup of Parmesan cheese
  • 1 tablespoon of Italian seasoning
  • olive oil


  1. Preheat the oven to 425°.
  2. Crumb the slice of whole wheat bread in a blender or food processor.
  3. Combine the bread crumbs, Parmesan cheese, and Italian seasoning in a small mixing bowl.
  4. Slice the zucchini into one- to two-inch strips.
  5. Coat the zucchini strips in olive oil.
  6. Roll the oiled zucchini strips in the bread crumb mixture.
  7. Arrange the breaded zucchini strips on an ungreased baking sheet.
  8. Bake for 15 minutes.
  9. Serve hot.
  10. Refrigerate any uneaten Italian Parmesan zucchini fries.
