I love onions. Luckily for me, my oldest hates onions, so I never have to share with her. I will sometimes roast an entire onion just to snack on. For Thanksgiving and Christmas meals, I often make homemade seasoned stuffing with a white onion. While reading about the history of Thanksgiving before the holiday this year, I learned that creamed onions were a popular recipe for much of the eighteenth and nineteenth centuries through the early twentieth century. For Thanksgiving this year, I combined a couple of recipes that I found into a tasty side dish that everyone in my family (except my daughter) raved about! I plan to serve the dish again next year.
Ingredients
- 3 large sweet onions
- 1/2 cup of whole milk
- 1 cup of cream
- 1 cup of white wine
- 3 tablespoons of all-purpose flour
- 4 tablespoons of melted butter
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1/4 teaspoon of nutmeg
- 8 ounces of Parmesan cheese
Directions
- Preheat the oven to 350°.
- Peel the onions.
- Slice the onions, leaving the rings intact.
- Layer the onion slices in a greased glass baking pan.
- Stir together the milk, cream, white wine, flour, melted butter, salt, pepper, and nutmeg.
- Pour the cream mixture over the sliced onions.
- Cook the onions covered for 45 minutes.
- Uncover the onions.
- Sprinkle the shredded Parmesan cheese on top of the onions.
- Cook for another 5 to 10 minutes or until the cheese is melted and bubbly.
- Serve the Parmesan creamed onions hot.
- Refrigerate any uneaten creamed onions.
