I have been busy over the past week processing the apples from my Jonathan apple tree. I have made many quarts of applesauce. My husband bought me a peeler and corer, which made preparing apples for applesauce so much easier. However, I hated wasting all the peels. I thus tried my hand at pink apple jelly. The jelly turned out so tasty that I decided to attempt some pink apple jam as well. My kids absolutely loved the jam, and I loved that I could use the peels and cores from my applesauce too.
Ingredients
- 1 dozen apple peels and cores
- 12 cups of water
- 6 apples
- 1.75 ounces of pectin
- 6 cups of sugar
Directions
- Cover the apple peels and cores with the water.
- Boil the apple pieces for 30 minutes.
- Strain the water from the cooked apple pieces
- Discard the cooked apple pieces.
- Transfer 6 cups of the apple water to a large pot.
- Core, peel, and dice the remaining 6 apples.
- Add the diced apples to the apple water.
- Whisk in the pectin.
- Boil until the apples are soft.
- Whisk in the sugar.
- Use a blender to mash up the boiled apples.
- Boil for 5 minutes or until jam begins to set.
- Transfer the apple jam to prepared pint jars, leaving, 1/4-inch headspace.
- Boil the jars in a water-bath for 5 minutes.
