White Bean and Gnocchi Soup Recipe

I am a bit obsessed with making soup for my family at the moment. One pot of soup can last two or three or even four meals. Plus, with the cold weather of winter, soup is simply warmly. I also love the gnocchi that I pick up from Dollar Tree. For only a few dollars, I can make a hearty and delicious soup that lasts for days. My daughter loves the gnocchi soup from Olive Garden, so I have been experimenting with my own gnocchi soups lately. Last week I shared my chicken and gnocchi soup recipe. This week I made a delicious and hearty white bean and gnocchi soup.

Ingredients

  • 48 ounces of chicken broth
  • 24 ounces of white beans (cannellini, Great Northern, pinto)
  • 17.6 ounces of potato gnocchi
  • 1 cup of shredded carrots
  • 1 cup of shredded cabbage
  • 1 tablespoon of Italian seasoning
  • 1 teaspoon of minced garlic
  • 1/2 teaspoon of salt

Directions

  1. Combine the chicken broth, white beans, potato gnocchi, carrots, cabbage, Italian seasoning, garlic, and salt in a large soup pot or slow cooker.
  2. Stir the soup.
  3. Heat the soup until ready to serve. If the soup becomes too thick, add some additional chicken broth or water.
  4. Serve the white bean and gnocchi soup hot.
  5. Refrigerate any uneaten white bean and gnocchi soup.
