I love making fritters for my family because of the versatility of the dish. During the summer, I make zucchini fritters and shallot potato zucchini fritters. Recently I have been on a cabbage kick. Instead of lettuce, I use coleslaw mix to make salads. I also came up with a delicious cabbage fritter recipe that my kiddos loved. I used some gluten-free flour that I had on hand from making some gluten-free chocolate chip coconut macaroon cookies, but you can also use all-purpose flour for a non-gluten-free version.
Ingredients
- 2 cups of shredded cabbage or coleslaw mix
- 1/2 cup of gluten-free flour
- 2 eggs
- 1 tablespoon of soy sauce
- 1/4 teaspoon of salt
- black pepper
- olive oil
Directions
- Combine the shredded cabbage, gluten-free flour, salt, and black pepper to taste in a medium bowl.
- Whisk together the eggs and soy sauce.
- Add the egg mixture to the cabbage mixture. Stir thoroughly.
- Pour a thin layer of olive oil into the bottom of a large skillet. Heat over medium heat.
- Spoon the fritter batter into the hot oil.
- Cook the fritters for 3 to 5 minutes on each side or until golden brown.
- Serve the gluten-free cabbage fritters hot with duck sauce, sour cream, or applesauce.
- Refrigerate any uneaten gluten-free cabbage fritters.
