My family loves fritters! During the summer, I make zucchini fritters and shallot potato zucchini fritters. Recently I have been on a cabbage kick. A couple weeks ago I made some delicious gluten-free cabbage fritters that my kiddos and I loved. I used some gluten-free flour that I had on hand from making some gluten-free chocolate chip coconut macaroon cookies. A few days later I made some similar salmon cabbage fritters using my cabbage fritters as the base of the fishy recipe. You can also use all-purpose flour for a non-gluten-free version.
Ingredients
- 5 ounces of canned salmon, drained
- 2 cups of shredded cabbage or coleslaw mix
- 1/2 cup of gluten-free flour
- 2 eggs
- 1/4 teaspoon of salt
- black pepper
- olive oil
Directions
- Combine the salmon, shredded cabbage, gluten-free flour, salt, and black pepper to taste in a medium bowl.
- Whisk the eggs.
- Add the egg mixture to the salmon-cabbage mixture. Stir thoroughly.
- Pour a thin layer of olive oil into the bottom of a large skillet. Heat over medium heat.
- Spoon the fritter batter into the hot oil.
- Cook the fritters for 3 to 5 minutes on each side or until golden brown.
- Serve the gluten-free cabbage fritters hot with sour cream or plain Greek yogurt.
- Refrigerate any uneaten gluten-free salmon cabbage fritters.
